We are constantly on the go. From school to daycare to dance and play dates, our days are busy and hectic. I wouldn’t have it any other way, but it takes some planning and preparing – heaven forbid I don’t have snacks at the ready at the exact instant that hunger strikes! 

My kids are thankfully not terribly picky, but they are a bit fickle. Months on end of wanting only seaweed for a snack abruptly ends with no warning, and I’m left scrambling to find another healthy snack to fill the void. Not only does it need to be something the kids will enjoy, and fill them up in a healthy way, it also needs to be portable and relatively mess-free; easy for our “on-the-go-getters” to take along and munch on. 

I’ve always been a big fan of chickpeas, so I decided to experiment a bit with roasted chickpeas to see if I could come up with a recipe the kids would eat up. This is the delicious on-the-go treat that  I ended up with: 

Peanut Butter & Honey Roasted Chickpeas

Ingredients

1 19oz can chickpeas (garbanzo beans)
2 tbsp Kraft Peanut Butter with Honey
1 tbsp olive oil
1/2 tsp cinnamon 

Directions

Step 1: Rinse chickpeas in a colander and pat dry. Skins can be removed or left as is. 

Step 2: Spread chickpeas on a cookie sheet or silpat and bake at 350° for approx 20 minutes or until lightly crunchy.

Step 3: While chickpeas are still hot, remove from oven and toss in a bowl with Kraft Peanut Butter with Honey, oil and cinnamon.

Step 4: Place chickpeas back on the cookie sheet and bake in the oven for another 5-10 minutes to set the glaze.

Step 5: Remove from the oven and allow to cool completely. 

Step 6: Enjoy! 

Roasted Chickpeas with Peanut Butter and Honey

My kids have always enjoyed peanut butter when we bake, and mixing it with honey on toast is one of our favourite breakfasts, so they were really excited to find that the Kraft Peanut Butter with Honey had it mixed right in! We spend a lot of time in the kitchen and I love that I have another simple recipe that not only will they eat, but they can join in the fun of making. They tried a few of the roasted chickpeas plain and agreed that they were much better with the peanut butter and honey!
