The warm weather is here! And with it comes a craving for treats to help us cool off. And what’s better than the ultimate classic of Summer treats than popsicles? YES PLEASE.
And while these are definitely a treat, you can easily sneak in some healthy ingredients among those pretty sprinkles. See below for what you’ll need and some suggestions to sneak in some healthy eats while you’re at it. YUM!
Makes 4 popsicles
1 cup vanilla ice cream or frozen yogurt (if you let it melt before blending it will make the process a little quicker)
2 cups milk
1/2 cup coconut flour (or use a white cake mix)
1 tsp vanilla extract
1/2 cup sprinkles

1/2 banana, mashed
ground flax or chia seeds
berries (great if you’d like colourful popsicles)
- In a blender, combine everything except for the coconut flour and sprinkles. Pulse until blended and smooth
- Add coconut flour and pulse until combined; stir in sprinkles (do this by hand with a spoon)*
- Pour popsicle mix into moulds and freeze for several hours
*I found the best way to have the sprinkles distribute throughout the popsicles was to add them right before pouring the mix into the popsicle moulds (you can see in the photos my 2 attempts- 1 where the sprinkles all settled and 1 where they were spread out throughout the popsicles)
If you want to add ingredients such as bananas or berries, add them into the wet mix when blending. For things such as chia and flax seeds, add with the coconut flour or cake mix. This will help achieve a smooth texture.
